I can tell you that the Acrobat SDK is not suitable. Even without looking at the proposed functions, it is not licensed for use on a web server, which I understand MVC3 implies. The LiveCycle product range is for server use, but outside my knowledge.
Not asking much, wanting sample code to do all of this part of your task!!
